Lunch


Burgers with mango salsa.

- 15% fat ground beef patty (100% grassfeed, organic, Whole Foods)
- 2 leaves of iceberg lettuce, could probably use cabbage as well
- slice white onions
- slice of tomato
- slice of Gruyere cheese (young gruyere is more pliable than cave-aged FYI)



Mango Salsa:

- 1-2 ripe but not mushy Mangoes, chopped, peeled and diced (these b's are a bit tricky, google it!)
- 1/2 cup chopped cilantro
- 1/2 red onion, finely chopped
- 1/2 lime, squeezed
- 1/4 lemon, squeezed
- 5-10 Habanero chilies (can substitute for a less awesome chili pepper if you're not a Viking.)
- 1 tbsp butter (for roasting the chilies)
- 1/2 small cucumber peeled and diced
- 1 avocado, sliced into small pieces
- Sea Salt & Pepper to taste

1st step, Roast those chilies! Rub 1 tbsp butter on a sheet of foil, cut in half and place the chilies in between the two pats. Fold up all ends and grill over medium-high heat for maybe 10 minutes, don't place them directly over the hottest part of the grill and continuously move/flip the foil pocket around. We want them roasted but not totally blackened. Do this while preparing the other ingredients.

Add the salsa ingredients together, it's as easy as that. Add the lemon & lime last. Slice the chilies up after roasting and add to the salsa. Mix evenly so the juices cover everything. T

**BE CAREFUL WITH HABANEROS, THE OILS AND SEEDS WILL FUCK YOUR DAY UP! I recommend NOT touching them if you can help it, wear gloves or handle them with a plastic bag. After they're roasted, slice them CAREFULLY, hold them with fork when you slice them. Wash your hands multiple times after each stage. Clean every surface they come into contact with. If you wear contacts like I do, wash multiple times periodically after handling and before taking them out for the evening. Seriously this shit will get ignorant on your corneas.**

Other than that, grill the burger until medium-rare. Add the cheese (doesn't instantly melt FYI) Throw that B in the lettuce leaf, add the tomato, onions and scoop the salsa on. The salsa is good for 2-3 days with the lime and lemon juice and this amount will cover 4-5 burgers.

Breakfast

Fuck yeah, Omelets.



-3 Eggs
- 1/4 to 1/2 cup Whole Milk
- 1/2 cup kale, chopped
- 1 sliced portabello mushroom, sliced or chopped
- 1/4 cup white onion, chopped
- 1/2 a bell pepper, chopped
- 1 tomato, sliced as garnish
- 1 avocado, sliced as garnish
- 2 tbsp. unsalted butter
- Sea Salt & ground pepper, optional


Heat 1tbsp butter in a wok or frying pan over medium heat until just melted. Add mushrooms, onion, bell pepper and kale to pan. Saute for a few minutes until onions are slightly translucent but not enough to where to kale is completely wilted, set aside.

Heat 1tbsp butter over low-medium heat until melted while simultaneously whisking eggs + 2 tbsp water + 1/4 cup milk in a bowl. Add a pinch of salt if you're into it. Pour mixture in pan once the butter has melted but not burned. Cover to retain moisture and cook for a few minutes, moving the pan around slightly so the center is not under direct heat the entire time.

When most of the top layer of liquid has started to cook, add vegetables to one half only. Carefully fold over one side and let cook for a few minutes. As long as you've added butter the omelet shouldn't stick to the pan, shift one side up on to the lip to flip easier.

Garnish with avocado, tomato and pepper (optional.) Dominate and conquer life.

Serves 1, prep time 5-10 minutes, cooking time 5-10 minutes.
